French Grilled Cheese Sandwiches (Croque Monsieur)

Spinach and Raspberry Salad with Balsamic Vinaigrette

Ingredients

  • 3 Tbsp Dijon mustard
  • 3 Tbsp mayonnaise
  • 12 slices sourdough bread
  • 1 (9-oz) pkg sliced ham
  • 1 (8-oz) pkg sliced Swiss cheese
  • 3 large eggs
  • ½ cup milk
  • 3 Tbsp butter, divided

Instructions

  1. Stir together mustard and mayonnaise. Spread over 1 side of each bread slice.
  2. Top 6 bread slices with ham and cheese; cover with 6 bread slices, mustard sides down.
  3. Whisk together eggs and milk in a shallow bowl. Dip sandwiches in egg mixture to coat.
  4. Melt 1 Tbsp butter in a large nonstick skillet over medium heat. Add 2 sandwiches to skillet, and cook 3 to 4 minutes per side or until golden brown and cheese is melted. Repeat procedure with remaining butter and sandwiches.

Side Dish Ingredients

  • 2 (6-oz) pkg baby spinach
  • 1 pint fresh raspberries 
  • ¾ cup balsamic vinaigrette
  • ½ cup thinly sliced red onion
  • ½ cup slivered almonds

Side Dish Instructions

  1. Toss together all ingredients in a large bowl just before serving.
