Ingredients

  • ½ (16-oz) pkg kielbasa, cut into ½-inch pieces
  • 1 cup sliced mushrooms
  • 1 green bell pepper, chopped
  • 1½ tsp olive oil
  • 6 large eggs, lightly beaten
  • ¼ tsp pepper
  • ⅛ tsp garlic salt

Instructions

  1. Preheat oven to 400°F. Cook kielbasa, mushrooms, and bell pepper in hot oil in a large skillet over medium heat 5 minutes or until kielbasa is browned, stirring often. Remove from skillet.
  2. Whisk together eggs, pepper, and garlic salt in a large bowl. Stir in kielbasa mixture. Pour into a lightly greased 9-inch square baking dish.
  3. Bake 20 to 25 minutes or until center is set. Cut into squares.

  • 1 Tbsp olive oil
  • 1 Tbsp apple cider vinegar
  • 1½ tsp Dijon mustard
  • 1½ tsp honey
  • 6 cups chopped romaine lettuce
  • ½ cup thinly sliced carrots
  • 1 Roma tomato, chopped

Side Dish Instructions

  1. Whisk together oil, vinegar, mustard, and honey in a large bowl. Add lettuce, carrots, and tomatoes; toss.
