Ingredients
- ½ (16-oz) pkg kielbasa, cut into ½-inch pieces
- 1 cup sliced mushrooms
- 1 green bell pepper, chopped
- 1½ tsp olive oil
- 6 large eggs, lightly beaten
- ¼ tsp pepper
- ⅛ tsp garlic salt
Instructions
- Preheat oven to 400°F. Cook kielbasa, mushrooms, and bell pepper in hot oil in a large skillet over medium heat 5 minutes or until kielbasa is browned, stirring often. Remove from skillet.
- Whisk together eggs, pepper, and garlic salt in a large bowl. Stir in kielbasa mixture. Pour into a lightly greased 9-inch square baking dish.
- Bake 20 to 25 minutes or until center is set. Cut into squares.
Side Dish Ingredients
- 1 Tbsp olive oil
- 1 Tbsp apple cider vinegar
- 1½ tsp Dijon mustard
- 1½ tsp honey
- 6 cups chopped romaine lettuce
- ½ cup thinly sliced carrots
- 1 Roma tomato, chopped
Side Dish Instructions
- Whisk together oil, vinegar, mustard, and honey in a large bowl. Add lettuce, carrots, and tomatoes; toss.
