Honey-Soy Salmon
Orange Sugar Snap Stir-FryIngredients
- 1½ lb salmon fillets
- ½ tsp salt
- ½ tsp pepper
- ¼ cup honey
- 2 Tbsp low-sodium soy sauce
- 1 Tbsp grated ginger (or use ¼ tsp ground ginger)
- 2 (8.5-oz) pouches microwavable brown basmati rice
Instructions
- Preheat broiler. Place fish on a greased foil-lined baking sheet; sprinkle with salt and pepper. Broil 5 minutes.
- Combine honey, soy sauce, and ginger; brush half of mixture over fish. Broil 2 to 3 minutes longer or until fish flakes with a fork; drizzle remaining honey mixture over fish.
- Meanwhile, cook rice according to package directions.

- 2 (12-oz) pkg sugar snap peas
- 1 red bell pepper, sliced
- 2 cloves garlic, minced
- 1 Tbsp dark sesame oil
- 1 tsp orange zest
- 1 Tbsp fresh orange juice
- 2 Tbsp low-sodium soy sauce
- ¼ tsp crushed red pepper
Side Dish Instructions
- Cook peas, bell pepper, and garlic in hot oil in a large nonstick skillet over medium heat 5 minutes or until vegetables are crisp-tender; stir in orange zest, orange juice, soy sauce, and red pepper.
- Cook 1 minute or until thoroughly heated.
