Caribbean Black Beans
Coconut Rice
Ingredients
- 2 green bell peppers, chopped
- ½ sweet onion, chopped
- 1 Tbsp olive oil
- 2 cloves garlic, minced
- 1 mango, coarsely chopped
- ⅓ cup orange juice
- ½ tsp ground allspice
- 2 (15-oz) cans black beans, drained
Instructions
- Cook bell peppers and onion in hot oil in large skillet over medium-high heat 4 minutes or until tender. Add garlic; cook 30 seconds or until fragrant.
- Stir in mango, orange juice, allspice, ½ tsp pepper, and beans; cook 3 to 4 minutes or until thoroughly heated. Serve bean mixture over Coconut Rice.
Side Dish Ingredients
- 2 cups brown rice
- 1 (13.5-oz) can coconut milk
- 1 Tbsp sugar
- ½ tsp salt
Side Dish Instructions
- Bring rice, coconut milk, and 2¾ cup water to a simmer in a saucepan. Reduce heat to medium-low, and simmer, covered, 40 minutes or until rice is done. Stir in sugar and salt before serving.
