Caribbean Black Beans

Ingredients

  • 2 green bell peppers, chopped
  • ½ sweet onion, chopped
  • 1 Tbsp olive oil
  • 2 cloves garlic, minced
  • 1 mango, coarsely chopped
  • ⅓ cup orange juice
  • ½ tsp ground allspice
  • 2 (15-oz) cans black beans, drained

Instructions

  1. Cook bell peppers and onion in hot oil in large skillet over medium-high heat 4 minutes or until tender. Add garlic; cook 30 seconds or until fragrant.
  2. Stir in mango, orange juice, allspice, ½ tsp pepper, and beans; cook 3 to 4 minutes or until thoroughly heated. Serve bean mixture over Coconut Rice.

Side Dish Ingredients

  • 2 cups brown rice
  • 1 (13.5-oz) can coconut milk
  • 1 Tbsp sugar
  • ½ tsp salt

Side Dish Instructions

  1. Bring rice, coconut milk, and 2¾ cup water to a simmer in a saucepan. Reduce heat to medium-low, and simmer, covered, 40 minutes or until rice is done. Stir in sugar and salt before serving.
