Chicken Pita Nachos

Ingredients

  • 1 lb boneless, skinless chicken breasts
  • 1 (9-oz) pkg baked whole wheat pita chips
  • 1 (10-oz) container hummus
  • 3 cups chopped romaine lettuce
  • 2 organic tomatoes, chopped
  • ¼ cup sliced pitted kalamata olives
  • 1 (4-oz) pkg crumbled feta cheese
  • 3 Tbsp olive oil
  • 1 Tbsp red wine vinegar
  • 1 tsp dried oregano (or use 1 Tbsp fresh oregano)

Instructions

  1. Preheat oven to 350°F. Sprinkle chicken lightly with salt and pepper on a lightly greased pan. Bake 28 to 30 minutes or until done. Cool slightly, and shred with 2 forks.
  2. Arrange chips on a platter; top with hummus, lettuce, chicken, tomatoes, olives, and cheese.
  3. Whisk together oil, vinegar, and oregano; drizzle over nachos.
