Chicken Pita Nachos

Ingredients
- 1 lb boneless, skinless chicken breasts
- 1 (9-oz) pkg baked whole wheat pita chips
- 1 (10-oz) container hummus
- 3 cups chopped romaine lettuce
- 2 organic tomatoes, chopped
- ¼ cup sliced pitted kalamata olives
- 1 (4-oz) pkg crumbled feta cheese
- 3 Tbsp olive oil
- 1 Tbsp red wine vinegar
- 1 tsp dried oregano (or use 1 Tbsp fresh oregano)
Instructions
- Preheat oven to 350°F. Sprinkle chicken lightly with salt and pepper on a lightly greased pan. Bake 28 to 30 minutes or until done. Cool slightly, and shred with 2 forks.
- Arrange chips on a platter; top with hummus, lettuce, chicken, tomatoes, olives, and cheese.
- Whisk together oil, vinegar, and oregano; drizzle over nachos.
