Thai Pork Chops

Garlic-Sesame Broccoli

Ingredients

  • ¼ cup lime juice
  • 2 Tbsp coconut aminos
  • 5 cloves garlic, minced
  • 6 boneless pork loin chops
  • 1 Tbsp chili powder
  • ¼ tsp ground turmeric
  • ½ tsp salt
  • ½ tsp pepper
  • 2 Tbsp avocado oil
  • ½ cup unsweetened coconut milk
  • 1 Tbsp chopped fresh mint

Instructions

  1. Combine lime juice, coconut aminos, and garlic in a large zip-top plastic freezer bag. Add pork to bag; seal and chill 2 hours.
  2. Remove pork from marinade, reserving marinade. Sprinkle pork with chili powder, turmeric, salt, and pepper.
  3. Cook pork in hot oil in a large nonstick skillet over medium-high heat 3 to 4 minutes per side or until done; remove from skillet, and keep warm.
  4. Add reserved marinade to skillet; bring to a boil, and cook 1 minute. Stir in coconut milk and mint; simmer 3 minutes or until slightly thickened. Drizzle sauce over pork.

Side Dish Ingredients

  • 2 lb broccoli, cut into florets (or use frozen broccoli)
  • 2 Tbsp sesame oil
  • 2 Tbsp avocado oil
  • 2 Tbsp coconut aminos
  • 2 cloves garlic, minced

Side Dish Instructions

  1. Preheat oven to 400°F. Toss together all ingredients on a large rimmed baking sheet.
  2. Bake 15 to 20 minutes or until broccoli is tender and browned, stirring once during last 5 minutes of cooking.
