Thai Pork Chops
Garlic-Sesame BroccoliIngredients
- ¼ cup lime juice
- 2 Tbsp coconut aminos
- 5 cloves garlic, minced
- 6 boneless pork loin chops
- 1 Tbsp chili powder
- ¼ tsp ground turmeric
- ½ tsp salt
- ½ tsp pepper
- 2 Tbsp avocado oil
- ½ cup unsweetened coconut milk
- 1 Tbsp chopped fresh mint
Instructions
- Combine lime juice, coconut aminos, and garlic in a large zip-top plastic freezer bag. Add pork to bag; seal and chill 2 hours.
- Remove pork from marinade, reserving marinade. Sprinkle pork with chili powder, turmeric, salt, and pepper.
- Cook pork in hot oil in a large nonstick skillet over medium-high heat 3 to 4 minutes per side or until done; remove from skillet, and keep warm.
- Add reserved marinade to skillet; bring to a boil, and cook 1 minute. Stir in coconut milk and mint; simmer 3 minutes or until slightly thickened. Drizzle sauce over pork.
Side Dish Ingredients
- 2 lb broccoli, cut into florets (or use frozen broccoli)
- 2 Tbsp sesame oil
- 2 Tbsp avocado oil
- 2 Tbsp coconut aminos
- 2 cloves garlic, minced
Side Dish Instructions
- Preheat oven to 400°F. Toss together all ingredients on a large rimmed baking sheet.
- Bake 15 to 20 minutes or until broccoli is tender and browned, stirring once during last 5 minutes of cooking.
