Easy Baby Back Ribs

Ingredients

  • 5½ lb baby back pork ribs (2 to 3 slabs)
  • 2 tsp garlic powder
  • 2 tsp salt
  • 1½ tsp pepper
  • 2 (10-oz) bottles organic barbecue sauce

Instructions

  1. Preheat oven to 300°F. Remove thin membrane from back of ribs by slicing into ribs with a knife and pulling membrane off with paper towels.
  2. Combine garlic powder, salt, and pepper; rub all over meaty side of ribs. Cut racks in half, if desired. Arrange ribs in a large roasting pan; cover tightly with foil. Bake 3 hours or until very tender; uncover and cool 15 minutes. Drain.
  3. Preheat grill to medium-high heat. Place ribs, meaty sides up, on grill rack rubbed with oil; baste generously with barbecue sauce.
  4. Grill, covered, 10 minutes. Baste and grill 5 minutes longer or until sauce clings to ribs.

Side Dish Ingredients

  • 3 Tbsp extra virgin olive oil
  • 2 Tbsp fresh orange juice
  • 2 tsp raw honey
  • ½ tsp kosher salt
  • ½ tsp ground cumin
  • 2 bunches kale, shredded
  • ½ cup golden raisins
  • ½ cup thinly sliced red onion

Side Dish Instructions

  1. Whisk together oil, orange juice, honey, salt, and cumin in a bowl. Add kale, raisins, and onion; toss. Let stand 10 minutes.
