Pineapple-Tomato Roasted Mahi Mahi

Ingredients

  • 2 (6-oz) skinless wild-caught mahi mahi fillets (or use salmon)
  • 1 tsp avocado oil
  • ⅛ tsp salt
  • ⅛ tsp lemon-pepper seasoning
  • 2 tsp chopped fresh cilantro
  • 1 Roma tomato, sliced
  • ¾ cup cubed pineapple

Instructions

  1. Preheat oven to 400°F. Place fish on a lightly greased rimmed baking sheet. Season with oil, salt, lemon-pepper, and cilantro. Top fish with tomato and pineapple.
  2. Bake 12 minutes or until fish flakes with a fork.

  • 1 clove garlic, minced
  • ⅛ tsp crushed red pepper
  • 1 Tbsp avocado oil
  • 1 (12-oz) pkg broccoli florets
  • ¼ tsp salt
  • ¼ tsp black pepper
  • 2 Tbsp organic chicken broth

Side Dish Instructions

  1. Cook garlic and red pepper in hot oil in a large saucepan over medium heat 1 minute or until garlic is tender. Stir in broccoli, salt, and black pepper.
  2. Add broth; cover and steam 6 minutes or until broccoli is tender.
