Pineapple-Tomato Roasted Mahi Mahi
Spicy Broccoli
Ingredients
- 2 (6-oz) skinless wild-caught mahi mahi fillets (or use salmon)
- 1 tsp avocado oil
- ⅛ tsp salt
- ⅛ tsp lemon-pepper seasoning
- 2 tsp chopped fresh cilantro
- 1 Roma tomato, sliced
- ¾ cup cubed pineapple
Instructions
- Preheat oven to 400°F. Place fish on a lightly greased rimmed baking sheet. Season with oil, salt, lemon-pepper, and cilantro. Top fish with tomato and pineapple.
- Bake 12 minutes or until fish flakes with a fork.

- 1 clove garlic, minced
- ⅛ tsp crushed red pepper
- 1 Tbsp avocado oil
- 1 (12-oz) pkg broccoli florets
- ¼ tsp salt
- ¼ tsp black pepper
- 2 Tbsp organic chicken broth
Side Dish Instructions
- Cook garlic and red pepper in hot oil in a large saucepan over medium heat 1 minute or until garlic is tender. Stir in broccoli, salt, and black pepper.
- Add broth; cover and steam 6 minutes or until broccoli is tender.
