Smashed Avocado-Sweet Potato Burgers

Ingredients

  • 2 (8- to 10-oz) sweet potatoes (see Note)
  • 1 Tbsp olive oil
  • ½ tsp salt, divided
  • ½ tsp pepper, divided
  • 4 (5.4-oz) ground beef patties
  • 1 avocado, halved
  • 4 Bibb lettuce leaves
  • 1 small red onion, thinly sliced
  • 2 Roma tomatoes, chopped
  • ¼ cup chopped fresh cilantro

Instructions

  1. Preheat oven to 425°F. Slice potatoes crosswise into 8 (½-inch-thick) rounds. Toss potatoes with oil and ¼ tsp each salt and pepper. Place in a single layer on a large rimmed baking sheet.
  2. Bake 20 minutes, turning potatoes after 10 minutes.
  3. Meanwhile, cook patties in a grill pan or cast-iron skillet over medium-high heat 5 to 6 minutes per side or until done.
  4. Mix together avocado and ¼ tsp each salt and pepper in a bowl, mashing slightly with a fork.
  5. Place 2 potato rounds on each of 4 plates. Top with lettuce, burgers, mashed avocado, onion, tomatoes, and cilantro.

Side Dish Ingredients

  • 4 cups chopped kale
  • 1 (10-oz) pkg angel hair coleslaw
  • ½ cup green goddess dressing
  • 2 Tbsp lemon juice

Side Dish Instructions

  1. Toss together all ingredients in a bowl.
