Smashed Avocado-Sweet Potato Burgers

- 2 (8- to 10-oz) sweet potatoes (see Note)
- 1 Tbsp olive oil
- ½ tsp salt, divided
- ½ tsp pepper, divided
- 4 (5.4-oz) ground beef patties
- 1 avocado, halved
- 4 Bibb lettuce leaves
- 1 small red onion, thinly sliced
- 2 Roma tomatoes, chopped
- ¼ cup chopped fresh cilantro
Instructions
- Preheat oven to 425°F. Slice potatoes crosswise into 8 (½-inch-thick) rounds. Toss potatoes with oil and ¼ tsp each salt and pepper. Place in a single layer on a large rimmed baking sheet.
- Bake 20 minutes, turning potatoes after 10 minutes.
- Meanwhile, cook patties in a grill pan or cast-iron skillet over medium-high heat 5 to 6 minutes per side or until done.
- Mix together avocado and ¼ tsp each salt and pepper in a bowl, mashing slightly with a fork.
- Place 2 potato rounds on each of 4 plates. Top with lettuce, burgers, mashed avocado, onion, tomatoes, and cilantro.

- 4 cups chopped kale
- 1 (10-oz) pkg angel hair coleslaw
- ½ cup green goddess dressing
- 2 Tbsp lemon juice
