Lemonade Scones

Ingredients

  • 2¼ cups all-purpose flour
  • 3 Tbsp granulated sugar
  • 1 Tbsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 5 Tbsp butter, cut into pieces
  • ½ (8-oz) block cream cheese, cut into pieces
  • ⅓ cup heavy cream
  • ⅓ cup plus 4 Tbsp lemonade, divided
  • 1 large egg
  • 1 cup powdered sugar

Instructions

  1. Preheat oven to 400°F. Whisk together flour, sugar, baking powder, baking soda, and salt in a large bowl.
  2. Cut in butter and cream cheese using a pastry blender, until mixture is crumbly.
  3. Whisk together cream, ⅓ cup lemonade, and egg; add to flour mixture, stirring just until dry ingredients are moistened.
  4. Turn out dough onto a heavily floured surface; pat into an 8-inch circle.
  5. Cut into 8 wedges. Place wedges on a parchment paper-lined baking sheet.
  6. Bake 15 minutes or until golden brown and done. Cool on baking sheet 15 minutes.
  7. Whisk together powdered sugar and 4 Tbsp lemonade until smooth. Drizzle over warm scones.
