Ingredients

  • ¼ cup whole wheat flour
  • ¼ tsp dried oregano
  • ¼ tsp paprika
  • 1 large egg, lightly beaten
  • 1 cup crushed multigrain tortilla chips
  • ½ lb boneless, skinless chicken breasts, cut into 2-inch chunks

Instructions

  1. Preheat oven to 425°F. Place a greased wire rack on a rimmed baking sheet.
  2. Combine flour, oregano, and paprika in a shallow bowl. Place egg in a second shallow bowl; place chips in a third shallow bowl.
  3. Dredge chicken in flour mixture, shaking off excess; dip in egg, and dredge in chips, pressing to adhere. Place on wire rack; coat with cooking spray.
  4. Bake 7 to 9 minutes per side or until done.

Side Dish Ingredients

  • ¾ lb carrots, sliced (or use frozen)
  • ½ cup low-sodium chicken broth
  • 1½ Tbsp honey
  • 1 Tbsp butter
  • ¼ tsp salt, divided
  • ¼ tsp pepper, divided
  • ½ lb green beans, ends trimmed (or use frozen)

Side Dish Instructions

  1. Combine carrots, broth, honey, butter, ⅛ tsp each salt and pepper in a medium saucepan. Bring to a boil; cover, reduce heat, and simmer 15 minutes or until carrots are tender.
  2. Meanwhile, steam green beans in a steamer basket over simmering water 5 minutes or until tender. Sprinkle with ⅛ tsp each salt and pepper.
