Tortilla-Crusted Chicken Nuggets

Ingredients
- ¼ cup whole wheat flour
- ¼ tsp dried oregano
- ¼ tsp paprika
- 1 large egg, lightly beaten
- 1 cup crushed multigrain tortilla chips
- ½ lb boneless, skinless chicken breasts, cut into 2-inch chunks
Instructions
- Preheat oven to 425°F. Place a greased wire rack on a rimmed baking sheet.
- Combine flour, oregano, and paprika in a shallow bowl. Place egg in a second shallow bowl; place chips in a third shallow bowl.
- Dredge chicken in flour mixture, shaking off excess; dip in egg, and dredge in chips, pressing to adhere. Place on wire rack; coat with cooking spray.
- Bake 7 to 9 minutes per side or until done.
Side Dish Ingredients
- ¾ lb carrots, sliced (or use frozen)
- ½ cup low-sodium chicken broth
- 1½ Tbsp honey
- 1 Tbsp butter
- ¼ tsp salt, divided
- ¼ tsp pepper, divided
- ½ lb green beans, ends trimmed (or use frozen)
Side Dish Instructions
- Combine carrots, broth, honey, butter, ⅛ tsp each salt and pepper in a medium saucepan. Bring to a boil; cover, reduce heat, and simmer 15 minutes or until carrots are tender.
- Meanwhile, steam green beans in a steamer basket over simmering water 5 minutes or until tender. Sprinkle with ⅛ tsp each salt and pepper.
