Buffalo Cauliflower Tacos

Ingredients
- 1 (12-oz) pkg cauliflower florets (or use 1 head)
- ½ cup vegan Buffalo sauce, divided (see Note)
- ½ Tbsp olive oil
- ½ tsp garlic powder
- 6 soft taco-size corn tortillas
- ½ romaine lettuce heart, shredded
- ½ avocado, diced
- ½ cup halved grape tomatoes
- ¼ cup thinly sliced radishes
- 3 Tbsp sliced green onions
- ½ cup vegan Ranch dressing
Instructions
- Preheat oven to 425°F. Cut larger cauliflower florets in half. Toss cauliflower with ¼ cup Buffalo sauce, oil, and garlic powder on a foil-lined baking sheet; spread in a single layer.
- Bake 25 minutes or until tender.
- Heat tortillas according to package directions. Drizzle cauliflower with ¼ cup Buffalo sauce, and serve in tortillas with lettuce, avocado, tomatoes, radishes, onions, and dressing.
