Classic Meat Loaf
Mashed Potatoes and Baby Carrots
Ingredients
- ½ cup panko breadcrumbs
- ½ (8-oz) can tomato sauce
- ¼ cup finely chopped onion
- 1 small clove garlic, minced
- 1 large egg, lightly beaten
- ½ tsp salt
- ¼ tsp pepper
- 1¼ lb ground beef
- Ketchup
Instructions
- Stir together panko, tomato sauce, onion, garlic, egg, salt, and pepper in a bowl. Add beef, and mix well with hands. Shape into a loaf.
- Lightly grease a 4-quart slow cooker; add meat loaf, shaping loaf so that there is a ½-inch space around edges of cooker.
- Cover and cook on LOW 6 to 8 hours or until loaf is no longer pink in center.
- Carefully remove loaf from cooker, and drain fat. Slice meat loaf. Serve with ketchup. Refrigerate leftovers and use to make sandwiches.
Side Dish Ingredients
- 1 (24-oz) pkg refrigerated mashed potatoes
- 1 Tbsp butter
- 1 cup baby carrots
Side Dish Instructions
- Cook mashed potatoes according to package directions. Stir in butter until melted.
- Serve baby carrots on each plate.
