Classic Meat Loaf

Mashed Potatoes and Baby Carrots

Ingredients

  • ½ cup panko breadcrumbs
  • ½ (8-oz) can tomato sauce
  • ¼ cup finely chopped onion
  • 1 small clove garlic, minced
  • 1 large egg, lightly beaten
  • ½ tsp salt
  • ¼ tsp pepper
  • 1¼ lb ground beef
  • Ketchup

Instructions

  1. Stir together panko, tomato sauce, onion, garlic, egg, salt, and pepper in a bowl. Add beef, and mix well with hands. Shape into a loaf.
  2. Lightly grease a 4-quart slow cooker; add meat loaf, shaping loaf so that there is a ½-inch space around edges of cooker.
  3. Cover and cook on LOW 6 to 8 hours or until loaf is no longer pink in center.
  4. Carefully remove loaf from cooker, and drain fat. Slice meat loaf. Serve with ketchup. Refrigerate leftovers and use to make sandwiches.

Side Dish Ingredients

  •  1 (24-oz) pkg refrigerated mashed potatoes
  • 1 Tbsp butter
  • 1 cup baby carrots

Side Dish Instructions

  1. Cook mashed potatoes according to package directions. Stir in butter until melted.
  2. Serve baby carrots on each plate.
