Italian Turkey Sausage-Shrimp Ragù
Parmesan Spaghetti Squash
Ingredients
- 1 (14-oz) pkg smoked turkey sausage, cut into ½-inch pieces
- 2 Tbsp vegetable oil
- 1 (10-oz) pkg frozen seasoning blend (diced onions, celery, and bell peppers)
- 4 cloves garlic, minced
- 1½ Tbsp Italian seasoning
- 1 tsp dried thyme
- 1 lb peeled and deveined, large raw shrimp
- 1 (14.5-oz) can fire-roasted diced tomatoes, drained
Instructions
- Cook sausage in hot oil in a large skillet over medium heat 5 minutes or until browned. Add seasoning blend, garlic, Italian seasoning, and thyme; cook 8 minutes, stirring often.
- Add shrimp and tomatoes. Cook 5 minutes or until shrimp turn pink. Serve over spaghetti squash.
Side Dish Ingredients
- 2 (3-lb) spaghetti squash, halved lengthwise (see Note)
- 1 Tbsp extra virgin olive oil
- ¼ cup freshly grated Parmesan cheese
- ½ tsp salt
- ½ tsp pepper
Side Dish Instructions
- Place squash, cut sides down, in a microwave-safe dish. Cover with plastic wrap. Microwave at HIGH powder 15 minutes or until fork-tender. Remove spaghetti-like strands from squash using a fork. Toss squash with oil, cheese, salt, and pepper.
