Italian Turkey Sausage-Shrimp Ragù

Ingredients

  • 1 (14-oz) pkg smoked turkey sausage, cut into ½-inch pieces
  • 2 Tbsp vegetable oil
  • 1 (10-oz) pkg frozen seasoning blend (diced onions, celery, and bell peppers)
  • 4 cloves garlic, minced
  • 1½ Tbsp Italian seasoning
  • 1 tsp dried thyme
  • 1 lb peeled and deveined, large raw shrimp
  • 1 (14.5-oz) can fire-roasted diced tomatoes, drained

Instructions

  1. Cook sausage in hot oil in a large skillet over medium heat 5 minutes or until browned. Add seasoning blend, garlic, Italian seasoning, and thyme; cook 8 minutes, stirring often.
  2. Add shrimp and tomatoes. Cook 5 minutes or until shrimp turn pink. Serve over spaghetti squash.

Side Dish Ingredients

  • 2 (3-lb) spaghetti squash, halved lengthwise (see Note)
  • 1 Tbsp extra virgin olive oil
  • ¼ cup freshly grated Parmesan cheese
  • ½ tsp salt
  • ½ tsp pepper

Side Dish Instructions

  1. Place squash, cut sides down, in a microwave-safe dish. Cover with plastic wrap. Microwave at HIGH powder 15 minutes or until fork-tender. Remove spaghetti-like strands from squash using a fork. Toss squash with oil, cheese, salt, and pepper.
