Asparagus and Fried Eggs on Parmesan Toast

Ingredients
- 1 clove garlic, cut in half
- 4 (1-oz) slices whole-grain sandwich bread
- 1 Tbsp olive oil, divided
- ½ cup freshly shredded Parmesan cheese, divided
- 1 lb asparagus, trimmed
- ¼ cup water
- 4 large eggs
- ¼ tsp salt
- ⅛ tsp pepper
Instructions
- Preheat broiler. Rub garlic on one side of each bread slice. Drizzle with ½ Tbsp oil; sprinkle with ¼ cup cheese. Broil 2 to 3 minutes or until golden.
- Bring asparagus and water to a boil in a large nonstick skillet, covered, over medium-high heat; boil 3 to 4 minutes or until tender. Drain. Wipe skillet clean.
- Heat ½ Tbsp oil in skillet over medium heat; crack eggs into skillet. Cover and cook 3 minutes or until whites are set and yolks are cooked to desired doneness.
- Arrange asparagus on toast. Top with eggs, salt, pepper, and ¼ cup cheese.
