Tuscan Chicken-Gnocchi Soup
Tuscan Kale SaladIngredients
- 2 (10-oz) pkg mirepoix (diced carrots, celery, and onion)
- 2 cloves garlic, minced
- 2 Tbsp olive oil
- 2 (32-oz) cartons low-sodium chicken broth
- 1½ tsp Italian seasoning
- ½ tsp pepper
- 1 (16-oz) pkg gnocchi
- 3 cups shredded rotisserie chicken
- 2 Tbsp chopped fresh oregano (or use 1 tsp dried)
Instructions
- Sauté mirepoix and garlic in hot oil in a large Dutch oven over medium-high heat 5 minutes. Stir in broth, seasoning, and pepper; bring to a boil.
- Add gnocchi and chicken; cook, stirring occasionally, 7 to 8 minutes or until gnocchi is done. Sprinkle with oregano.
Side Dish Ingredients
- ½ cup Italian breadcrumbs
- 2 bunches lacinato kale, chopped
- ½ cup olive oil and vinegar dressing
- ½ cup freshly grated Parmesan cheese
Side Dish Instructions
- Toast breadcrumbs in a dry skillet over medium-high heat 3 to 4 minutes or until golden.
- Toss together kale, breadcrumbs, dressing, and cheese in a large bowl.
