Creamy Chicken and White Bean Alfredo
Lemony Roasted Broccolini
Ingredients
- 4 oz whole-grain linguine
- ½ cup cannellini beans, rinsed
- ⅓ cup milk
- ¼ tsp garlic powder
- ¼ tsp pepper
- Dash of salt
- 1 cup chopped rotisserie chicken (or use other cooked chicken)
- ½ cup freshly grated Parmesan cheese, divided
- 1 Tbsp chopped fresh parsley
Instructions
- Cook pasta according to package directions.
- Meanwhile, puree beans, milk, garlic powder, pepper, and salt in a food processor until smooth, scraping sides as needed.
- Toss bean mixture, chicken, and ¼ cup cheese with pasta. Cook over medium heat 5 to 7 minutes or until thoroughly heated. Sprinkle with ¼ cup cheese and parsley before serving.

- ¾ lb Broccolini
- 2 tsp olive oil
- ⅛ tsp garlic powder
- ⅛ tsp pepper
- Dash of salt
- ½ lemon
Side Dish Instructions
- Preheat broiler. Toss together Broccolini, oil, garlic powder, pepper, and salt on a foil-lined rimmed baking sheet. Broil 5 to 7 minutes or until tender, turning once.
- Meanwhile, grate 1 tsp zest and squeeze 1 Tbsp juice from lemon. Toss Broccolini with lemon zest and juice.
