Corn Chip Pie Bowls
Ingredients
- 1½ lb ground beef
- 1 (15-oz) can tomato sauce
- 1 (15-oz) can black beans, drained and rinsed
- 1 (15-oz) can whole kernel corn, drained
- 1 (10-oz) can enchilada sauce
- 1 (1.25-oz) envelope chili seasoning mix
- 1 (9.25-oz) pkg corn chips
- 1 (8-oz) pkg shredded Cheddar cheese
- ½ head iceberg lettuce, shredded
- 1 (8-oz) carton sour cream
Instructions
- Cook beef in a large Dutch oven over medium heat until browned and crumbly; drain and return to pot.
- Stir in tomato sauce, beans, corn, enchilada sauce, and chili seasoning; bring to a boil, reduce heat, and simmer 10 minutes.
- Divide desired amount of corn chips among 6 bowls. Top with chili mixture, cheese, lettuce, and sour cream. Serve immediately.
