Creamy Rosemary-Dijon Chicken
Ingredients
- 2 lb boneless, skinless chicken breasts, halved lengthwise
- ¾ tsp salt
- ½ tsp pepper
- 2 Tbsp olive oil
- 2 Tbsp butter
- 2 Tbsp all-purpose flour
- 1 cup chicken broth
- ½ cup white wine
- 3 Tbsp Dijon mustard
- 1 Tbsp chopped fresh rosemary
Instructions
- Sprinkle chicken with salt and pepper. Cook, in batches, in hot oil in a large nonstick skillet over medium-high heat 2 to 3 minutes per side or until browned. Remove from skillet, and keep warm.
- Melt butter in skillet over medium heat; whisk in flour, and cook 1 to 2 minutes or until browned. Stir in broth, wine, mustard, and rosemary. Return chicken to skillet. Simmer 5 minutes or until chicken is done and sauce is thickened.
