Chicken and Sausage Jambalaya
Ingredients
- 1 (12-oz) pkg cauliflower crumbles
- 1 (13-oz) pkg Andouille smoked sausage, sliced
- 2 red bell peppers, chopped
- 1 small onion, chopped
- 2 cloves garlic, minced
- 2 Tbsp olive oil
- 2 cups diced rotisserie chicken
- 1 (14.5-oz) can diced tomatoes
- 1 (14.5-oz) can low-sodium kidney beans, drained and rinsed
- ½ Tbsp Creole seasoning
Instructions
- Steam cauliflower according to package directions.
- Cook sausage, bell peppers, onion, and garlic in hot oil in a Dutch oven 5 minutes or until tender.
- Stir in chicken, tomatoes, beans, and seasoning; reduce heat, and simmer 5 minutes.
- Stir in cauliflower.
