Ingredients

  • 1½ lb ground pork (or use ground chicken)
  • 2 Tbsp olive oil
  • 1 onion, chopped
  • 1 cup shredded carrots
  • 2 tsp grated ginger
  • 3 cloves garlic, minced
  • ¼ cup water
  • 6 cups shredded cabbage
  • 6 Tbsp low-sodium soy sauce

Instructions

  1. Cook pork in hot oil in a large skillet over medium-high heat 4 to 5 minutes or until starting to brown.
  2. Add onion, and cook 3 to 4 minutes. Add carrots, ginger, and garlic; sauté 2 to 3 minutes. Add water, scraping skillet to loosen browned bits.
  3. Add cabbage and soy sauce; cover, reduce heat to medium-low, and simmer 10 to 15 minutes or until cabbage is tender.
