Egg Roll Bowl
Ingredients
- 1½ lb ground pork (or use ground chicken)
- 2 Tbsp olive oil
- 1 onion, chopped
- 1 cup shredded carrots
- 2 tsp grated ginger
- 3 cloves garlic, minced
- ¼ cup water
- 6 cups shredded cabbage
- 6 Tbsp low-sodium soy sauce
Instructions
- Cook pork in hot oil in a large skillet over medium-high heat 4 to 5 minutes or until starting to brown.
- Add onion, and cook 3 to 4 minutes. Add carrots, ginger, and garlic; sauté 2 to 3 minutes. Add water, scraping skillet to loosen browned bits.
- Add cabbage and soy sauce; cover, reduce heat to medium-low, and simmer 10 to 15 minutes or until cabbage is tender.
