Steak and Asparagus with Basil-Blue Cheese Butter

Ingredients

  • 1½ lb top sirloin steak
  • 1 tsp salt
  • ½ tsp pepper
  • 1 lb asparagus, trimmed
  • ¼ cup butter, softened
  • 1 (4-oz) pkg crumbled blue cheese
  • 2 Tbsp chopped fresh basil (or use 1 tsp dried)

Instructions

  1. Preheat grill or grill pan to medium-high heat. Sprinkle steak with salt and pepper.
  2. Grill steak, covered with grill lid, 5 minutes per side or to desired doneness.
  3. Cover with foil, and let stand 5 to 10 minutes. Cut into 6 portions.
  4. Grill asparagus 2 to 4 minutes or until tender.
  5. Stir together butter, blue cheese, and basil. Dollop blue cheese butter over steaks and asparagus.

Side Dish Ingredients

  • ¼ cup olive oil
  • 2 Tbsp lime juice
  • 1½ Tbsp honey
  • 2 tsp Dijon mustard
  • ½ tsp salt
  • ½ tsp pepper
  • 2 (5-oz) pkg arugula (or mixed greens)

Side Dish Instructions

  1. Whisk together oil, lime juice, honey, mustard, salt, and pepper in a large bowl. Add arugula; toss.
