Steak and Asparagus with Basil-Blue Cheese Butter

Ingredients
- 1½ lb top sirloin steak
- 1 tsp salt
- ½ tsp pepper
- 1 lb asparagus, trimmed
- ¼ cup butter, softened
- 1 (4-oz) pkg crumbled blue cheese
- 2 Tbsp chopped fresh basil (or use 1 tsp dried)
Instructions
- Preheat grill or grill pan to medium-high heat. Sprinkle steak with salt and pepper.
- Grill steak, covered with grill lid, 5 minutes per side or to desired doneness.
- Cover with foil, and let stand 5 to 10 minutes. Cut into 6 portions.
- Grill asparagus 2 to 4 minutes or until tender.
- Stir together butter, blue cheese, and basil. Dollop blue cheese butter over steaks and asparagus.
Side Dish Ingredients
- ¼ cup olive oil
- 2 Tbsp lime juice
- 1½ Tbsp honey
- 2 tsp Dijon mustard
- ½ tsp salt
- ½ tsp pepper
- 2 (5-oz) pkg arugula (or mixed greens)
Side Dish Instructions
- Whisk together oil, lime juice, honey, mustard, salt, and pepper in a large bowl. Add arugula; toss.
