Chicken Tikka Masala
Simple Cauli-Rice and Peas
Ingredients
- 1½ lb boneless, skinless chicken breasts, cut into 1½-inch cubes
- 1 tsp ground cumin
- 1 tsp ground cinnamon
- 1 tsp salt, divided
- 2 Tbsp olive oil, divided
- ½ cup chopped onion
- 3 cloves garlic, minced
- 1 Tbsp refrigerated ginger paste
- 1 tsp garam masala (see Note)
- ½ tsp ground red pepper
- 1 (26.5-oz) pkg chopped tomatoes
- ¼ cup low-sodium chicken broth
- ¼ cup heavy cream
- 2 Tbsp butter
- Fresh cilantro leaves
Instructions
- Sprinkle chicken with cumin, cinnamon, and ½ tsp salt. Cook in 1 Tbsp hot oil in a large nonstick skillet over medium-high heat 5 minutes or until browned. Remove from skillet.
- Sauté onion, garlic, and ginger in 1 Tbsp hot oil in same skillet 1 minute. Reduce heat and cook 5 minutes, stirring often.
- Add garam masala and red pepper; cook 1 minute, stirring constantly. Add tomatoes, broth, cream, and ½ tsp salt, scraping pan to loosen browned bits .
- Bring to a boil; reduce heat, and add chicken. Cook 5 minutes or until chicken is done. Stir in butter. Sprinkle with cilantro .

- 2 (10-oz) pkg frozen riced cauliflower
- 1 (10-oz) pkg frozen peas
- ½ tsp salt
Side Dish Instructions
- Cook cauliflower and peas according to package directions.
- Combine cauliflower, peas, and salt.
