Chicken Tikka Masala

Ingredients

  • 1½ lb boneless, skinless chicken breasts, cut into 1½-inch cubes
  • 1 tsp ground cumin
  • 1 tsp ground cinnamon
  • 1 tsp salt, divided
  • 2 Tbsp olive oil, divided
  • ½ cup chopped onion
  • 3 cloves garlic, minced
  • 1 Tbsp refrigerated ginger paste
  • 1 tsp garam masala (see Note)
  • ½ tsp ground red pepper
  • 1 (26.5-oz) pkg chopped tomatoes
  • ¼ cup low-sodium chicken broth
  • ¼ cup heavy cream
  • 2 Tbsp butter
  • Fresh cilantro leaves

Instructions

  1. Sprinkle chicken with cumin, cinnamon, and ½ tsp salt. Cook in 1 Tbsp hot oil in a large nonstick skillet over medium-high heat 5 minutes or until browned. Remove from skillet.
  2. Sauté onion, garlic, and ginger in 1 Tbsp hot oil in same skillet 1 minute. Reduce heat and cook 5 minutes, stirring often.
  3. Add garam masala and red pepper; cook 1 minute, stirring constantly. Add tomatoes, broth, cream, and ½ tsp salt, scraping pan to loosen browned bits .
  4. Bring to a boil; reduce heat, and add chicken. Cook 5 minutes or until chicken is done. Stir in butter. Sprinkle with cilantro .

  • 2 (10-oz) pkg frozen riced cauliflower
  • 1 (10-oz) pkg frozen peas
  • ½ tsp salt

Side Dish Instructions

  1. Cook cauliflower and peas according to package directions.
  2. Combine cauliflower, peas, and salt.
