Ingredients

  • 2 (10.6-oz) pkg refrigerated barbecue jackfruit
  • 1 (16-oz) pkg tricolor coleslaw
  • 1 mango, diced
  • 1 cup chopped pineapple
  • ¼ cup vegan mayonnaise
  • 1 Tbsp lime juice
  • ¼ tsp black pepper
  • ⅛ tsp cayenne pepper (optional)
  • 6 vegan hamburger buns, toasted

Instructions

  1. Heat jackfruit according to package directions.
  2. Stir together coleslaw, mango, pineapple, mayonnaise, lime juice, black pepper, and, if desired, cayenne pepper. Serve jackfruit on buns with slaw.

  • 1 (20-oz) bag frozen sweet potato fries
  • 2 Tbsp chopped fresh parsley
  • 1 Tbsp chopped fresh basil
