Clean Eating Doughnut Holes

Ingredients
- 1 cup raw cashews
- 1 cup old-fashioned rolled oats
- 1 cup pitted dates, chopped
- ¼ tsp salt
- 2 Tbsp coconut oil
- 2 Tbsp pure maple syrup
- ¼ tsp pure vanilla extract
Instructions
- Soak nuts in water for at least 4 hours; drain.
- Process nuts, oats, dates, and salt in a blender or food processor until a thick dough forms.
- Roll dough into 1-inch balls; place in freezer until firm, about 20 minutes.
- Melt coconut oil; stir in maple syrup and vanilla. Dip doughnut holes in glaze, and chill until glaze sets.
