Cheesy Pork and Black Bean Chalupas

Ingredients

  • 4 corn tortillas
  • ½ Tbsp olive oil
  • 1 cup shredded Monterey Jack cheese
  • ½ (16-oz) container sauceless pulled pork
  • ½ (15-oz) can black beans, drained and rinsed
  • ½ (8-oz) pkg shredded lettuce
  • ½ (16-oz) container fresh salsa
  • ¼ cup sour cream
  • 1 avocado, sliced

Instructions

  1. Preheat oven to 400°F. Place tortillas on a baking sheet, and brush with oil.
  2. Bake 8 to 10 minutes or until crisp; sprinkle with cheese, and bake 1 minute or until cheese melts.
  3. Meanwhile, stir together pork and beans in a bowl; cover and microwave until thoroughly heated.
  4. Divide tortillas among 2 plates; top with pork mixture, lettuce, salsa, sour cream, and avocado.
