Cheesy Pork and Black Bean Chalupas
Ingredients
- 4 corn tortillas
- ½ Tbsp olive oil
- 1 cup shredded Monterey Jack cheese
- ½ (16-oz) container sauceless pulled pork
- ½ (15-oz) can black beans, drained and rinsed
- ½ (8-oz) pkg shredded lettuce
- ½ (16-oz) container fresh salsa
- ¼ cup sour cream
- 1 avocado, sliced
Instructions
- Preheat oven to 400°F. Place tortillas on a baking sheet, and brush with oil.
- Bake 8 to 10 minutes or until crisp; sprinkle with cheese, and bake 1 minute or until cheese melts.
- Meanwhile, stir together pork and beans in a bowl; cover and microwave until thoroughly heated.
- Divide tortillas among 2 plates; top with pork mixture, lettuce, salsa, sour cream, and avocado.
