Honey-Soy Salmon

Ingredients

  • ¾ lb salmon fillets
  • ¼ tsp salt
  • ¼ tsp pepper
  • 2 Tbsp honey
  • 1 Tbsp low-sodium soy sauce
  • 1½ tsp grated ginger (or use ⅛ tsp ground ginger)
  • 1 (8.5-oz) pouch microwavable brown basmati rice

Instructions

  1. Preheat broiler. Place fish on a greased foil-lined baking sheet; sprinkle with salt and pepper. Broil 5 minutes.
  2. Combine honey, soy sauce, and ginger; brush half of mixture over fish. Broil 2 to 3 minutes longer or until fish flakes with a fork; drizzle remaining honey mixture over fish.
  3. Meanwhile, cook rice according to package directions.

  • 1 (12-oz) pkg sugar snap peas
  • ½ red bell pepper, sliced
  • 1 clove garlic, minced
  • 1½ tsp dark sesame oil
  • ½ tsp orange zest
  • 1½ tsp fresh orange juice
  • 1 Tbsp low-sodium soy sauce
  • ⅛ tsp crushed red pepper

Side Dish Instructions

  1. Cook peas, bell pepper, and garlic in hot oil in a large nonstick skillet over medium heat 5 minutes or until vegetables are crisp-tender; stir in orange zest, orange juice, soy sauce, and red pepper.
  2. Cook 1 minute or until thoroughly heated.
