Oatmeal Cookie Sandwiches

Ingredients
- ½ cup butter, softened
- 1 cup packed brown sugar
- 1 large egg, beaten
- 1 Tbsp vanilla extract
- 1½ cups quick-cooking oats
- ¾ cup all-purpose flour
- ½ tsp baking powder
- ½ tsp baking soda
- ¼ tsp ground cinnamon (optional)
- ¾ cup raisins
- Vanilla ice cream
Instructions
- Preheat oven to 350°F. Beat butter with an electric mixer 1 to 2 minutes or until creamy. Add brown sugar, and beat until light and fluffy. Add egg and vanilla; beat until well blended.
- Combine oats, flour, baking powder, soda and, if desired, cinnamon; gradually add to butter mixture, beating on low speed until blended. Stir in raisins.
- Drop dough by tablespoonfuls onto greased baking sheets. Bake 8 to 10 minutes; cool 5 minutes. Transfer to wire racks to cool completely.
- Smear a small amount of ice cream between 2 cookies. Serve immediately, or wrap and freeze individual sandwich cookies.
- Makes 12 sandwich cookies.
