Chocolate Crunch Trail Mix
Ingredients
- 3 cups quick-cooking oats
- 1 cup corn cereal squares
- ½ cup packed brown sugar
- ½ cup chopped pecans
- ½ tsp salt
- ¼ tsp ground cinnamon
- ¼ cup honey
- 2 Tbsp canola oil
- ½ cup semisweet chocolate chips
- 1 tsp vanilla extract
- ½ cup sweetened dried cranberries
Instructions
- Preheat oven to 300°F. Line a rimmed baking sheet with parchment paper.
- Combine oats, cereal, brown sugar, nuts, salt, and cinnamon in a large bowl.
- Cook honey and oil in a saucepan over medium-low heat 2 minutes or until warm; stir in chocolate chips and vanilla. Remove from heat; stir until smooth.
- Gradually stir chocolate mixture into oats mixture; spread onto prepared baking sheet.
- Bake 28 to 30 minutes, stirring twice. Cool in pan on a wire rack. Stir in dried cranberries. Store in an airtight container. Makes 12 (½-cup) servings.
