Chocolate Crunch Trail Mix

Ingredients

  • 3 cups quick-cooking oats
  • 1 cup corn cereal squares
  • ½ cup packed brown sugar
  • ½ cup chopped pecans
  • ½ tsp salt
  • ¼ tsp ground cinnamon
  • ¼ cup honey
  • 2 Tbsp canola oil
  • ½ cup semisweet chocolate chips
  • 1 tsp vanilla extract
  • ½ cup sweetened dried cranberries

Instructions

  1. Preheat oven to 300°F. Line a rimmed baking sheet with parchment paper.
  2. Combine oats, cereal, brown sugar, nuts, salt, and cinnamon in a large bowl.
  3. Cook honey and oil in a saucepan over medium-low heat 2 minutes or until warm; stir in chocolate chips and vanilla. Remove from heat; stir until smooth.
  4. Gradually stir chocolate mixture into oats mixture; spread onto prepared baking sheet.
  5. Bake 28 to 30 minutes, stirring twice. Cool in pan on a wire rack. Stir in dried cranberries. Store in an airtight container. Makes 12 (½-cup) servings.
