Lentil Sloppy Joes

Ingredients

  • 1½ cups French lentils (or use green lentils)
  • 2 carrots, chopped
  • 2 green bell peppers, chopped
  • 1 cup chopped onion
  • 1 (6-oz) can tomato paste
  • ½ cup vegetable broth
  • 1 tsp apple cider vinegar
  • 1 Tbsp cracked pepper seasoning (or use Montreal steak seasoning)
  • 1 tsp yellow mustard
  • 6 hamburger buns
  • 1 (8-oz) jar sliced pickles

Instructions

  1. Bring lentils and water to cover to a gentle boil in a Dutch oven; reduce heat, and simmer 10 to 15 minutes. Drain.
  2. Sauté carrots, bell peppers, and onion in a lightly greased large nonstick skillet over medium heat 6 minutes or until browned.
  3. Add lentils, tomato paste, broth, vinegar, seasoning, and mustard. Cook 5 to 8 minutes or until thickened and lentils are tender.
  4. Serve lentil mixture on buns with pickles and, if desired, favorite coleslaw.
