Lentil Sloppy Joes
Ingredients
- 1½ cups French lentils (or use green lentils)
- 2 carrots, chopped
- 2 green bell peppers, chopped
- 1 cup chopped onion
- 1 (6-oz) can tomato paste
- ½ cup vegetable broth
- 1 tsp apple cider vinegar
- 1 Tbsp cracked pepper seasoning (or use Montreal steak seasoning)
- 1 tsp yellow mustard
- 6 hamburger buns
- 1 (8-oz) jar sliced pickles
Instructions
- Bring lentils and water to cover to a gentle boil in a Dutch oven; reduce heat, and simmer 10 to 15 minutes. Drain.
- Sauté carrots, bell peppers, and onion in a lightly greased large nonstick skillet over medium heat 6 minutes or until browned.
- Add lentils, tomato paste, broth, vinegar, seasoning, and mustard. Cook 5 to 8 minutes or until thickened and lentils are tender.
- Serve lentil mixture on buns with pickles and, if desired, favorite coleslaw.
