Tuna Cakes
Ingredients
- 4 (6-oz) cans wild-caught tuna in water, drained and flaked
- ¾ cup Italian breadcrumbs
- 2 large eggs, lightly beaten
- 1 Tbsp fresh lemon juice
- 1 Tbsp olive-oil mayonnaise
- 2 tsp dried dill
- 3 Tbsp olive oil
- Lemon wedges (optional)
Instructions
- Gently combine tuna and next 5 ingredients; shape into 12 (1-inch-thick) patties.
- Cook patties, in batches, in hot oil in a large nonstick skillet over medium heat 3 to 4 minutes per side or until done.
- Serve with lemon wedges, if desired.
