Green Chile Taco Soup
Ingredients
- 1 lb ground beef
- 1 cup chopped onion
- 1 (28-oz) can green chile enchilada sauce
- 2 cups chicken broth
- 1 (12-oz) pkg frozen corn, thawed
- 1 (15.25-oz) can chili beans, drained
- 1 (15-oz) can black beans, drained and rinsed
- 1 (10-oz) can diced tomatoes and green chiles, drained
- 1 (1-oz) envelope taco seasoning mix
- 1 (3.5-oz) pkg tortilla strips
Instructions
- Cook beef and onion in a large Dutch oven over medium heat until browned and crumbly; drain and return to pot.
- Stir in enchilada sauce, broth, corn, beans, tomatoes and green chiles, and seasoning mix.
- Bring to a boil over medium heat; reduce heat, and simmer 15 minutes. Top with tortilla strips, if desired.
