Green Chile Taco Soup

Ingredients

  • 1 lb ground beef
  • 1 cup chopped onion
  • 1 (28-oz) can green chile enchilada sauce 
  • 2 cups chicken broth
  • 1 (12-oz) pkg frozen corn, thawed 
  • 1 (15.25-oz) can chili beans, drained
  • 1 (15-oz) can black beans, drained and rinsed
  • 1 (10-oz) can diced tomatoes and green chiles, drained
  • 1 (1-oz) envelope taco seasoning mix
  • 1 (3.5-oz) pkg tortilla strips

Instructions

  1. Cook beef and onion in a large Dutch oven over medium heat until browned and crumbly; drain and return to pot.
  2. Stir in enchilada sauce, broth, corn, beans, tomatoes and green chiles, and seasoning mix.
  3. Bring to a boil over medium heat; reduce heat, and simmer 15 minutes. Top with tortilla strips, if desired.
