Baked Southwest Ravioli

Ingredients

  • 1 (16-oz) jar mild salsa
  • 1 (15-oz) can tomato sauce
  • 1 Tbsp ground cumin
  • 1 (25-oz) pkg frozen cheese ravioli
  • 1 (15-oz) can black beans, drained and rinsed
  • 1 (12-oz) pkg frozen corn
  • 1 (8-oz) pkg shredded Monterey Jack cheese
  • 1 (8-oz) carton sour cream (optional)

Instructions

  1. Preheat oven to 350°F. Stir together salsa, tomato sauce, and cumin. Spread ½ cup salsa mixture in bottom of a lightly greased 13-x 9-inch baking dish.
  2. Top with frozen ravioli, beans, corn, remaining salsa mixture, and cheese; cover and bake 45 minutes. Uncover and bake 10 minutes longer or until bubbly. Top with sour cream, if on hand.
