Ingredients
- ¾ lb boneless, skinless chicken breasts
- 2 Tbsp butter
- ½ cup chopped onion
- 1 tsp minced garlic
- 1 cup small shell pasta
- 1½ cups chicken broth
- 1 (10-oz) pkg frozen chopped spinach, thawed and squeezed dry
- 1 cup grape tomatoes
- ½ cup shredded Parmesan cheese
Instructions
- Cut chicken into 2-inch pieces; season lightly with salt and pepper.
- Melt butter in a large skillet over medium heat; add chicken, onion, and garlic, and cook, stirring occasionally, until chicken is done. Add pasta; cook, stirring occasionally, 2 minutes or until toasted.
- Stir in broth and spinach; top with tomatoes. Bring to a boil; cover, reduce heat, and simmer 12 minutes or until liquid is absorbed.
- Stir in cheese, and season with salt and pepper to taste.
