Three-Cheese Macaroni Bake

Ingredients

  • 8 oz elbow macaroni
  • 3 Tbsp butter, divided
  • 2 Tbsp all-purpose flour
  • 1½ cups milk
  • ½ cup half-and-half
  • 1 cup shredded white Cheddar cheese (or use other Cheddar)
  • ½ cup freshly grated Parmesan cheese
  • 1 cup shredded Gruyere cheese
  • 1 tsp salt
  • ½ tsp pepper
  • 1 cup (or more) panko breadcrumbs

Instructions

  1. Preheat oven to 350°F. Cook pasta according to package directions.
  2. Melt 2 Tbsp butter in a saucepan over medium heat. Whisk in flour; cook, stirring constantly, 1 minute. Gradually whisk in milk and half-and-half, stirring constantly, 3 to 5 minutes or until thickened.
  3. Stir in all cheeses, salt, and pepper until smooth; add pasta.
  4. Melt 1 Tbsp butter in microwave at HIGH 30 seconds. Combine melted butter and panko.
  5. Pour pasta mixture into a lightly greased 11-x 7-inch baking dish; top with panko.
  6. Bake 30 to 35 minutes or until top is golden.
