Three-Cheese Macaroni Bake

Ingredients
- 8 oz elbow macaroni
- 3 Tbsp butter, divided
- 2 Tbsp all-purpose flour
- 1½ cups milk
- ½ cup half-and-half
- 1 cup shredded white Cheddar cheese (or use other Cheddar)
- ½ cup freshly grated Parmesan cheese
- 1 cup shredded Gruyere cheese
- 1 tsp salt
- ½ tsp pepper
- 1 cup (or more) panko breadcrumbs
Instructions
- Preheat oven to 350°F. Cook pasta according to package directions.
- Melt 2 Tbsp butter in a saucepan over medium heat. Whisk in flour; cook, stirring constantly, 1 minute. Gradually whisk in milk and half-and-half, stirring constantly, 3 to 5 minutes or until thickened.
- Stir in all cheeses, salt, and pepper until smooth; add pasta.
- Melt 1 Tbsp butter in microwave at HIGH 30 seconds. Combine melted butter and panko.
- Pour pasta mixture into a lightly greased 11-x 7-inch baking dish; top with panko.
- Bake 30 to 35 minutes or until top is golden.
