Beef-Topped Baked Potatoes

Ingredients
- 6 small russet potatoes
- 1 lb ground beef (or use ground turkey)
- 1¾ cups low-sodium beef broth
- 1 (1-oz) pkg brown gravy mix
- 2 Tbsp Worcestershire sauce
- ¼ cup butter, cut into pieces
- 1 tsp salt
- ½ tsp pepper
- Chopped fresh parsley (optional)
Instructions
- Preheat oven to 400°F. Pierce potatoes, and wrap in foil. Bake 1 hour or until tender.
- Cook beef in a large skillet over medium heat until browned and crumbly; drain and return to skillet.
- Add broth, gravy mix, and Worcestershire sauce to beef. Cook over medium heat 10 minutes, stirring often.
- Split potatoes, and fluff with a fork; top with butter, salt, and pepper.
- Spoon beef with gravy over potatoes. Top with any fresh herbs on hand, if desired.
