Chicken and Creamy Pasta Casserole

Ingredients

  • 1 (16-oz) pkg ziti
  • ¼ cup butter
  • 2 lb boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 (8-oz) pkg sliced mushrooms
  • 1 cup chopped onion
  • 4 cloves garlic, minced
  • ¼ cup all-purpose flour
  • 1 (14.5-oz) can chicken broth
  • 1 cup heavy cream
  • 2 (14.5-oz) cans diced tomatoes with Italian seasonings
  • 1 (8-oz) pkg shredded whole-milk mozzarella cheese
  • 1 (10-oz) pkg spinach

Instructions

  1. Preheat oven to 350°F. Cook pasta according to package directions; drain, and place in a large bowl.
  2. Melt butter in a large, deep skillet over medium-high heat. Add chicken, mushrooms, onion, and garlic; season lightly with salt and pepper. Cook, stirring occasionally, until chicken is done.
  3. Sprinkle flour over mixture; cook, stirring, 2 minutes. Gradually stir in broth, cream, and tomatoes; bring to a boil, reduce heat, and simmer until mixture is thickened. Gradually stir in cheese until melted.
  4. Add spinach, stirring until wilted. Add mixture to pasta; toss. Spoon into a lightly greased 3½-quart baking dish. Bake 30 to 45 minutes or until hot and bubbly.
