Sausage and Navy Beans

Ingredients

  • 2 tsp canola oil
  • 2 (3.9-oz) links Italian turkey sausage, casings removed
  • 1½ cups chopped onion
  • 1 cup frozen sliced carrots
  • 1 (15-oz) can no-salt-added navy beans, drained and rinsed
  • ½ tsp dried thyme
  • 1½ tsp liquid smoke (optional)

Instructions

  1. Cook sausage in 1 tsp hot oil in a Dutch oven over medium-high heat 4 minutes or until browned and crumbly. Transfer sausage to a plate; keep warm.
  2. Sauté onion in 1 tsp oil in pot over medium heat 10 minutes or until tender. Add 1 cup water, carrots, beans, thyme, sausage, and, if desired, liquid smoke.
  3. Bring to a boil; reduce heat, cover, and simmer 15 minutes or until carrots are tender.
