Baked Sausage Penne

Ingredients

  • 4 oz whole-grain penne pasta
  • 1 link Italian turkey sausage, casing removed
  • 1 zucchini, chopped
  • 1 tsp dried basil
  • ¾ cup low-sodium marinara sauce
  • ¼ cup shredded part skim mozzarella cheese

Instructions

  1. Cook pasta according to package directions; drain.
  2. Meanwhile, heat a nonstick skillet over medium high heat. Add sausage, zucchini and basil; cook 6 to 8 minutes or until sausage is browned and crumbly. Add marinara sauce.
  3. Toss pasta with half of sausage mixture and place in a small baking dish. Spread remaining sausage mixture over pasta; sprinkle with cheese.
  4. If desired, wrap tightly and freeze. When ready to bake, thaw overnight in refrigerator.
  5. Preheat oven to 350°F. Bake 20 to 25 minutes or until cheese is golden brown.
