Lemon-Avocado Penne Primavera

Ingredients
- 12 oz whole-grain penne pasta
- 1 (12-oz) pkg broccoli florets, coarsely chopped (see Note)
- 1½ cups shredded carrots
- 1 red onion, sliced
- 1 pint grape tomatoes, halved
- 2 lemons (see Note)
- 2 avocados, chopped
- 1½ cups freshly grated Parmesan cheese
- ½ tsp salt
- ½ tsp pepper
Instructions
- Cook pasta according to package directions, reserving ¼ cup pasta water.
- Meanwhile, cook broccoli, carrots, and onion in a large skillet coated with cooking spray over medium-high heat 5 to 6 minutes or until tender. Add tomatoes; cook 5 minutes.
- Grate zest and squeeze juice from lemons. Toss pasta, avocados, cheese, lemon zest, lemon juice, reserved pasta water, salt, and pepper with vegetable mixture until blended.
