Lemon-Avocado Penne Primavera

Ingredients

  • 12 oz whole-grain penne pasta
  • 1 (12-oz) pkg broccoli florets, coarsely chopped (see Note)
  • 1½ cups shredded carrots
  • 1 red onion, sliced
  • 1 pint grape tomatoes, halved
  • 2 lemons (see Note)
  • 2 avocados, chopped
  • 1½ cups freshly grated Parmesan cheese
  • ½ tsp salt
  • ½ tsp pepper

Instructions

  1. Cook pasta according to package directions, reserving ¼ cup pasta water.
  2. Meanwhile, cook broccoli, carrots, and onion in a large skillet coated with cooking spray over medium-high heat 5 to 6 minutes or until tender. Add tomatoes; cook 5 minutes.
  3. Grate zest and squeeze juice from lemons. Toss pasta, avocados, cheese, lemon zest, lemon juice, reserved pasta water, salt, and pepper with vegetable mixture until blended.
