Cheesy Cuban-Style Pork Chops
Black Bean and Cilantro RiceIngredients
- 2 (8-oz) boneless pork chops
- 2 Tbsp whole-grain Dijon mustard
- ¾ cup panko breadcrumbs
- 2 Tbsp olive oil
- ½ (9-oz) pkg thinly sliced ham
- ¼ cup dill pickle chips
- 2 slices Swiss cheese
Instructions
- Preheat oven to 400°F. Brush pork with mustard; season lightly with salt and pepper. Place panko in a shallow bowl; dredge pork in panko, shaking off excess.
- Cook pork in hot oil in a large nonstick skillet over medium-high heat 3 minutes per side or until browned. Place on a rimmed baking sheet.
- Top pork with ham, pickles, and cheese. Bake 10 minutes or until cheese is melted.

- 1 (8-oz) pouch microwavable long-grain rice
- 1 (15-oz) can black beans, rinsed and drained
- 2 Tbsp chopped fresh cilantro
- 1 Tbsp olive oil
- ¼ tsp garlic powder
Side Dish Instructions
- Heat rice according to package directions; spoon into a large bowl.
- Stir in beans, cilantro, oil, and garlic powder. Season to taste.
