Cheesy Cuban-Style Pork Chops

Ingredients

  • 2 (8-oz) boneless pork chops
  • 2 Tbsp whole-grain Dijon mustard
  • ¾ cup panko breadcrumbs
  • 2 Tbsp olive oil
  • ½ (9-oz) pkg thinly sliced ham
  • ¼ cup dill pickle chips
  • 2 slices Swiss cheese

Instructions

  1. Preheat oven to 400°F. Brush pork with mustard; season lightly with salt and pepper. Place panko in a shallow bowl; dredge pork in panko, shaking off excess.
  2. Cook pork in hot oil in a large nonstick skillet over medium-high heat 3 minutes per side or until browned. Place on a rimmed baking sheet.
  3. Top pork with ham, pickles, and cheese. Bake 10 minutes or until cheese is melted.

Side Dish Ingredients

  • 1 (8-oz) pouch microwavable long-grain rice
  • 1 (15-oz) can black beans, rinsed and drained
  • 2 Tbsp chopped fresh cilantro 
  • 1 Tbsp olive oil
  • ¼ tsp garlic powder

Side Dish Instructions

  1. Heat rice according to package directions; spoon into a large bowl.
  2. Stir in beans, cilantro, oil, and garlic powder. Season to taste.
