Ingredients

  • 1 zucchini
  • 2 shallots, finely chopped
  • 1¼ lb ground turkey
  • ¾ tsp kosher salt
  • ½ tsp pepper
  • ½ cup whole wheat panko breadcrumbs
  • 1 large egg, lightly beaten
  • 6 whole wheat hamburger buns, split and toasted
  • 12 Bibb lettuce leaves
  • 2 organic tomatoes, sliced

Instructions

  1. Grate zucchini on large holes of a box grater. Squeeze zucchini between layers of paper towels to remove excess moisture.
  2. Combine zucchini, shallots, turkey, salt, pepper, panko, and egg in a large bowl. Shape into 6 patties.
  3. Preheat grill to medium-high heat. Grill patties, covered, 5 to 6 minutes per side or until no longer pink. Serve burgers on buns with lettuce and tomato.

Side Dish Ingredients

  • 6 ears corn, shucked (or use frozen ears corn)
  • 3 Tbsp olive oil
  • ¼ tsp salt
  • ¼  tsp pepper
  • 6 watermelon wedges (see Note)

Side Dish Instructions

  1. Preheat grill to medium-high heat. Brush corn with oil; sprinkle with salt and pepper.
  2. Grill corn, covered, 12 to 15 minutes, turning occasionally, or until tender.
  3. Serve watermelon and corn on each plate.
