Falafel Pita Sandwiches
Creamy Cucumbers and Tomatoes
Ingredients
- 2 (15.5-oz) cans no-salt-added chickpeas, drained and rinsed
- ¼ cup chopped fresh parsley
- 1 large egg
- 2 Tbsp lemon juice
- 1 tsp ground cumin
- ½ tsp salt
- ½ tsp pepper
- ¼ cup whole wheat panko breadcrumbs
- 3 Tbsp olive oil
- 6 lettuce leaves
- ½ cup crumbled feta cheese
- ½ cup thinly sliced red onion
- 3 whole wheat pita bread rounds, halved
Instructions
- Pulse chickpeas, parsley, egg, lemon juice, cumin, salt, and pepper in a food processor until smooth; stir in panko. Shape into 12 (2½-inch) patties.
- Cook patties in hot oil in a large nonstick skillet over medium heat 2 minutes per side. Place 2 patties, 1 lettuce leaf, 1 Tbsp cheese, and onions in each pita half.

- 1 seedless cucumber, halved and sliced
- 1 pint organic grape tomatoes, halved
- ⅓ cup plain Greek yogurt
- 2 cloves garlic, minced
- ½ tsp salt
- ½ tsp pepper
Side Dish Instructions
- Combine cucumber, tomatoes, yogurt, garlic, salt, and pepper in a medium bowl; chill until ready to serve.
