Skillet Burgers

Rosemary-Garlic Sweet Potato Wedges

Ingredients

  • 6 (5.4-oz) ground beef patties
  • ½ tsp salt
  • ½ tsp pepper
  • 1 onion, sliced
  • 1 green bell pepper, sliced
  • 4 cloves garlic, minced
  • 1 Tbsp avocado oil
  • 1 (14.5-oz) can diced tomatoes, drained
  • 2 tsp dried oregano

Instructions

  1. Sprinkle patties with salt and pepper. Cook patties in a large nonstick skillet over medium-high heat 5 to 6 minutes per side or until no longer pink. Remove from skillet, and keep warm.
  2. Sauté onion, bell pepper, and garlic in hot oil in large skillet over medium-high heat 6 to 8 minutes or until tender. Stir in tomatoes, oregano, and salt and pepper to taste.
  3. Cook 5 minutes or until slightly thickened. Spoon sauce over patties.

  • 4 large sweet potatoes, peeled and cut into ½-inch-thick wedges
  • 2 Tbsp avocado oil
  • 2 cloves garlic, minced
  • 1 Tbsp dried rosemary
  • ½ tsp salt
  • ½ tsp pepper

Side Dish Instructions

  1. Preheat oven to 400°F. Toss together all ingredients on a rimmed baking sheet; spread in a single layer.
  2. Bake 25 minutes or until tender and browned, turning once during the last 10 minutes of baking.
