Skillet Burgers
Rosemary-Garlic Sweet Potato Wedges
Ingredients
- 6 (5.4-oz) ground beef patties
- ½ tsp salt
- ½ tsp pepper
- 1 onion, sliced
- 1 green bell pepper, sliced
- 4 cloves garlic, minced
- 1 Tbsp avocado oil
- 1 (14.5-oz) can diced tomatoes, drained
- 2 tsp dried oregano
Instructions
- Sprinkle patties with salt and pepper. Cook patties in a large nonstick skillet over medium-high heat 5 to 6 minutes per side or until no longer pink. Remove from skillet, and keep warm.
- Sauté onion, bell pepper, and garlic in hot oil in large skillet over medium-high heat 6 to 8 minutes or until tender. Stir in tomatoes, oregano, and salt and pepper to taste.
- Cook 5 minutes or until slightly thickened. Spoon sauce over patties.

- 4 large sweet potatoes, peeled and cut into ½-inch-thick wedges
- 2 Tbsp avocado oil
- 2 cloves garlic, minced
- 1 Tbsp dried rosemary
- ½ tsp salt
- ½ tsp pepper
Side Dish Instructions
- Preheat oven to 400°F. Toss together all ingredients on a rimmed baking sheet; spread in a single layer.
- Bake 25 minutes or until tender and browned, turning once during the last 10 minutes of baking.
