Smoky Sweet Potato Fries

Ingredients

  • ¾ lb ground beef (or use ground turkey)
  • 2 slices colby-Jack cheese
  • 1 avocado, cubed
  • 3 Tbsp mayonnaise
  • 1 Tbsp chopped fresh cilantro
  • ½ tsp lime zest
  • 2 hamburger buns, split
  • 2 leaves lettuce
  •  1 tomato, sliced
  • ½ red onion, thinly sliced

Instructions

  1. Shape beef into 2 patties; season lightly with salt and pepper. Cook patties in a large skillet over medium-high heat 5 minutes per side or until no longer pink. Top burgers with cheese; let stand until melted.
  2. Mash together avocado, mayonnaise, cilantro, and lime zest until smooth; season with salt and pepper to taste. Spread on buns.
  3. Serve burgers on buns with lettuce, tomato, and onion.

Side Dish Ingredients

  • ½ (20-oz) pkg frozen sweet potato fries (or use other frozen fries)
  • 1 tsp smoked paprika
  • ¼ tsp garlic powder
  • ¼ tsp ground cumin

Side Dish Instructions

  1. Bake fries according to package directions.
  2. Stir together paprika, garlic powder, and cumin. Sprinkle over fries; season with salt and pepper to taste.
