Mini Gouda Meat Loaves

Ingredients

  • ⅓ cup frozen seasoning blend (diced onion, bell peppers, and celery)
  • 2 tsp minced garlic
  • ¼ cup panko breadcrumbs
  • 2 tsp Worcestershire sauce
  • 1 tsp Dijon mustard
  • ⅛ tsp salt
  • ⅛ tsp pepper
  • 1 large egg yolk, lightly beaten
  • ½ lb lean ground beef
  • 2 (0.7-oz) slices Gouda cheese

Instructions

  1. Preheat oven to 450°F. Microwave seasoning blend in a large bowl at HIGH 2 minutes or until tender. Stir in garlic, breadcrumbs, Worcestershire, mustard, salt, pepper, and eggs; add beef, and gently mix together using your hands.
  2. Shape mixture into 2 small meat loaves. Place on a wire rack on a foil-lined rimmed baking sheet.
  3. Bake 15 minutes; top with cheese, tearing slices as needed. Bake 5 minutes longer or until no longer pink in centers.

  • 1 (12-oz) pkg green beans
  • 1 (8-oz) pkg sliced baby portobello mushrooms
  • 1 Tbsp olive oil
  • 1 Tbsp minced garlic
  • ¼ tsp kosher salt
  • ⅛ tsp pepper

Side Dish Instructions

  1. Preheat oven to 450°F. Toss together all ingredients on a rimmed baking sheet. Bake 12 minutes or until vegetables are browned and tender.
