Mini Gouda Meat Loaves
Roasted Green Beans and Mushrooms
Ingredients
- ⅓ cup frozen seasoning blend (diced onion, bell peppers, and celery)
- 2 tsp minced garlic
- ¼ cup panko breadcrumbs
- 2 tsp Worcestershire sauce
- 1 tsp Dijon mustard
- ⅛ tsp salt
- ⅛ tsp pepper
- 1 large egg yolk, lightly beaten
- ½ lb lean ground beef
- 2 (0.7-oz) slices Gouda cheese
Instructions
- Preheat oven to 450°F. Microwave seasoning blend in a large bowl at HIGH 2 minutes or until tender. Stir in garlic, breadcrumbs, Worcestershire, mustard, salt, pepper, and eggs; add beef, and gently mix together using your hands.
- Shape mixture into 2 small meat loaves. Place on a wire rack on a foil-lined rimmed baking sheet.
- Bake 15 minutes; top with cheese, tearing slices as needed. Bake 5 minutes longer or until no longer pink in centers.

- 1 (12-oz) pkg green beans
- 1 (8-oz) pkg sliced baby portobello mushrooms
- 1 Tbsp olive oil
- 1 Tbsp minced garlic
- ¼ tsp kosher salt
- ⅛ tsp pepper
Side Dish Instructions
- Preheat oven to 450°F. Toss together all ingredients on a rimmed baking sheet. Bake 12 minutes or until vegetables are browned and tender.
