Flank Steak with Yogurt Cream Sauce
Roasted Vegetables
Ingredients
- ½ lb flank steak, well trimmed
- ¼ tsp salt
- ¼ tsp pepper
- 2 Tbsp cup plain Greek yogurt
- 2 Tbsp olive oil
- ½ avocado, diced
- 1 Tbsp lemon juice
- 2 cloves garlic
- ⅛ tsp ground cumin
Instructions
- Sprinkle steak with salt and pepper. Cook in a grill pan or cast-iron skillet over medium-high heat 5 to 7 minutes per side or to desired doneness. Let stand 10 minutes before thinly slicing across the grain.
- Meanwhile, process yogurt, oil, avocado, lemon juice, garlic, and cumin in a food processor until smooth. Serve with steak.
Side Dish Ingredients
- 2 cups broccoli florets (or use frozen)
- 1 (8-oz) pkg cremini mushrooms
- 1 large carrot, cut into ½-inch pieces (or use frozen)
- 1 organic red bell pepper, cut into 1-inch pieces (or use frozen chopped)
- ½ red onion, cut into wedges
- 2 cloves garlic, coarsely chopped
- 1 Tbsp olive oil
- 1 Tbsp balsamic vinegar
Side Dish Instructions
- Preheat oven to 425°F. Toss together broccoli, mushrooms, carrots, bell pepper, onion, garlic, and oil on a rimmed baking sheet. Sprinkle lightly with salt and pepper.
- Bake 15 to 20 minutes or until carrots are tender, stirring once after 10 minutes. Drizzle with vinegar; toss.
