Ingredients
- 1 lemon
- 3 (6-oz) salmon filets
- 1 Tbsp Old Bay seasoning
- 1½ Tbsp olive oil
Instructions
- Grate zest and squeeze juice from lemon.
- Rub fish with seasoning. Cook in hot oil in a nonstick skillet over medium-high heat 4 to 6 minutes per side or until flakes with a fork.
- Sprinkle fish with zest and drizzle with juice.

- 1 (10-oz) pkg frozen riced cauliflower
- ¼ lb ground sausage
- ½ onion, chopped
- ½ cup chopped green bell pepper
- 1 stalk celery, chopped
- 1 clove garlic, minced
- 1 tsp Cajun seasoning (or use Old Bay seasoning)
- 2 green onions, chopped
Side Dish Instructions
- Cook cauliflower according to package directions; drain.
- Cook sausage, onion, bell pepper, celery, and garlic in a large skillet over medium-high heat 5 to 6 minutes or until sausage is browned and crumbly.
- Add cauliflower; cook 3 minutes or until browned. Stir in green onions.
