Ingredients

  • 1 lemon
  • 3 (6-oz) salmon filets
  • 1 Tbsp Old Bay seasoning
  • 1½ Tbsp olive oil

Instructions

  1. Grate zest and squeeze juice from lemon.
  2. Rub fish with seasoning. Cook in hot oil in a nonstick skillet over medium-high heat 4 to 6 minutes per side or until flakes with a fork.
  3. Sprinkle fish with zest and drizzle with juice.

Side Dish Ingredients

  • 1 (10-oz) pkg frozen riced cauliflower
  • ¼ lb ground sausage
  • ½ onion, chopped
  • ½ cup chopped green bell pepper
  • 1 stalk celery, chopped
  • 1 clove garlic, minced
  • 1 tsp Cajun seasoning (or use Old Bay seasoning)
  • 2 green onions, chopped

Side Dish Instructions

  1. Cook cauliflower according to package directions; drain.
  2. Cook sausage, onion, bell pepper, celery, and garlic in a large skillet over medium-high heat 5 to 6 minutes or until sausage is browned and crumbly.
  3. Add cauliflower; cook 3 minutes or until browned. Stir in green onions.
