Turkey Burger Salad

Ingredients
- ¾ lb ground turkey
- ½ (10-oz) pkg frozen chopped spinach, thawed and squeezed dry
- ¼ cup almond flour
- ½ cup minced red onion
- 3 Tbsp chopped fresh mint, divided
- 1 tsp Greek seasoning
- ½ tsp lemon zest
- 1 large egg, lightly beaten
- 1 small English cucumber, sliced
- 2 Roma tomatoes, sliced
- ¼ cup sliced red onion
- 1 Tbsp fresh lemon juice
- ½ Tbsp extra virgin olive oil
- 1 (5-oz) pkg spinach
Instructions
- Stir together turkey, chopped spinach, flour, minced onion, 1 Tbsp mint, Greek seasoning, lemon zest, and egg in a large bowl. Shape into 2 patties.
- Preheat grill or grill pan to medium-high heat. Grill patties, covered, 7 to 8 minutes per side or until no longer pink.
- Meanwhile, stir together cucumber, tomatoes, sliced onion, 2 Tbsp mint, lemon juice, and oil.
- Divide fresh spinach between plates; top with cucumber mixture and burgers.
