Turkey Burger Salad

Ingredients

  • ¾ lb ground turkey
  • ½ (10-oz) pkg frozen chopped spinach, thawed and squeezed dry
  • ¼ cup almond flour
  • ½ cup minced red onion
  • 3 Tbsp chopped fresh mint, divided
  • 1 tsp Greek seasoning
  • ½ tsp lemon zest
  • 1 large egg, lightly beaten
  • 1 small English cucumber, sliced
  • 2 Roma tomatoes, sliced
  • ¼ cup sliced red onion
  • 1 Tbsp fresh lemon juice
  • ½ Tbsp extra virgin olive oil
  • 1 (5-oz) pkg spinach

Instructions

  1. Stir together turkey, chopped spinach, flour, minced onion, 1 Tbsp mint, Greek seasoning, lemon zest, and egg in a large bowl. Shape into 2 patties.
  2. Preheat grill or grill pan to medium-high heat. Grill patties, covered, 7 to 8 minutes per side or until no longer pink.
  3. Meanwhile, stir together cucumber, tomatoes, sliced onion, 2 Tbsp mint, lemon juice, and oil.
  4. Divide fresh spinach between plates; top with cucumber mixture and burgers.
