Baked Sausage Penne

Ingredients

  • 12 oz penne pasta
  • 2 links Italian turkey sausage, casings removed (or use 1 lb any sausage)
  • 3 zucchini, chopped
  • 1 Tbsp dried basil
  • 1 (24-oz) jar marinara sauce
  • 2 cups shredded mozzarella cheese

Instructions

  1. Preheat oven 350°F. Cook pasta according to package directions; drain.
  2. Meanwhile, cook sausage, zucchini, and basil in a nonstick skillet over medium-high heat 6 to 8 minutes or until sausage is browned and crumbly. Add marinara sauce.
  3. Toss pasta with half of sausage mixture, and place in two small disposable pans. Spread remaining sausage mixture over pasta in each pan; sprinkle with cheese.
  4. Bake one pan 20 to 25 minutes or until top is browned and bubbly. Wrap and freeze remaining unbaked pan for up to 1 month.
